INTRODUCTION TO CULINARY ARTS
As the first course in the Culinary Arts Pathway, it is designed to introduce students to the fundamental principles of planning, organizing, staffing, directing, and controlling the management of a variety of food service operations. The course will provide insight into the operation of a well-run restaurant. Introduction to Culinary Arts will provide insight into basic food production skills, various levels of industry management, and hospitality skills. This is an entry level course for students interested pursuing a career in the food service industry. This course is offered as a classroom and laboratory-based course. |

ICA Group Cake Projects
Student groups were expected to produce a Six inch, four (4) layer cake with either a Butter Cream, Cream Cheese, or Fondant icing. Each cake has a crumb coat prior to the regular decorative icing. Student groups created a poster drawing of their designs prior to the production. For most students this was their first attempt following a baking formula using Grams and/or baking a cake in general. Students demonstrated their ability to follow direction, show their creativity, and work as part of a team.
